What do you need

  • 2 15-Ounce Cans Black Beans (not drained)

  • Optional: Sour Cream
    • 16 Ounces
    • Vegetable Soup
    • Optional, Chopped Onion
    • Half a Cup of Salsa
    • Optional: Fresh Chopped Cilantro
    • 1 tablespoon Paprika
    • Optional: Shredded Cheese

    How do I do this

    1. Mash a can of black beans with mashed potatoes. Or, if needed, brew the beans in the food processor with a little extra water until they are mostly smooth.
    2. Pour two cans of beans into a medium pot.
    3. Add vegetable broth, salsa and chili powder.
    4. Boil.
    5. It is ready, once it gets boiling.
    6. If needed, black bean soup can be topped with shredded cheese, sour cream, onions and cilantro. Of course, you can use vegan cheese and vegetarian sour cream substitutes.
    7. This recipe makes four low-fat vegetarian black bean soups. If this is a bit more than you and your family, this is a delicious soup to enjoy the next day. You can also freeze the excess soup so that it can be reheated for lunch or dinner later. You can reheat it in the microwave or gently heat the stove on the pan.
