How to make perfect use of a whole chicken?

Eat dry “zero waste roast chicken”

Out of environmental and ethical considerations, I choose to cook as little meat as possible when I cook at home.

If you decide to cook meat, I also tend to choose organic free-range meat and make the most of it.

This recipe is a good representative. In a whole chicken, we also use the chicken bones, fat, and some leftovers in it to achieve zero waste.

  • 10 tbsp olive oil
  • 8 teaspoons coarse Sea Salt

  • 8 teaspoons flour

  • 8 teaspoons honey
  • 320 ml white wine
  • 320 ml water
  • 4 tbsp capers
  • Salt
  • Black pepper
  • Parsley (for garnish)

How To Make Zero Waste Roast Chicken

Zero Waste Roast Chicken Cooking Steps 1/5

Bowl (large) scissors knife kitchen towel oven

Preheat the oven to 230ºC, flatten the whole chicken, save the shaved bones, and use it in the soup later.

Use kitchen paper towels to dry the chicken.

2½ tablespoons olive oil 2 teaspoons coarse sea salt

Shallow baking tray baking brush

Put the whole chicken on a baking tray, rub olive oil on the skin, and season both sides with coarse sea salt.

Bake in the oven for 40 minutes, until the skin is crispy.

You can also grill the meat that was removed in the first step, and then pour it into the chicken broth later.

After roasting, take out the whole chicken, then cover it with tin foil (don’t wrap it tightly), and then retain the roasted juice.

½ lemon 30 g butter 1 tbsp 2 capers 2 teaspoons flour 80 ml white wine 80 ml water 2 teaspoons honey salt black pepper.

Pan grater spatula.


Grab the lemon zest, add half of the butter in a pan, add capers, fry until crispy, then take it out and set aside. Add about 5 tablespoons of roast chicken juice and the remaining butter to the pot.

Heat over medium heat. After the butter has melted, add the flour, stir to mix, and heat until slightly bubbling. Add white wine and water, stir well and cook until the sauce thickens. Add lemon zest, lemon juice, and honey.

Season with salt and black pepper.

Place the chicken on a plate, cut the whole chicken, and cut off the chicken legs, chicken wings, and chicken breasts.

Pour the sauce on the plate, put the chicken on the skin side up, and garnish with parsley and fried capers.
