Delicious Turkish Balaban kebab, which looks like a homemade Alexander, is a flavor unique to Eskişehir cuisine. Ingredients for Balaban Kebab Recipe
For the meatballs:

  • 500 grams ground beef
  • 1.5 teaspoons of black pepper
  • 1 cup of stale bread crumbs (ground)
  • 2 onions
  • 1.5 teaspoons of salt
  • For the sauce:
  • 2 tablespoons of tomato paste
  • 1 teaspoon of granulated sugar
  • 1/2 tablespoon of butter
  • 1/2 cup of water
  • 1/2 teaspoon of salt

For the above:

  • 2 nail pita breads
  • 1 cup of yogurt
  • 1 cup of beef broth
  • 4 tablespoons of melted butter
  • 1 tomato
  • 2 peppers

How to Make Balaban Kebab?

  1. First, cut the onion into cubes and finely grind the bread crumbs if possible.
  2. Add ground beef, bread crumbs, onion, black pepper, and salt into a bowl and knead.
  3. Tear off walnut-sized pieces from the meatball mortar you prepared. Flatten the meatballs with your hands and fry them in a cast-iron skillet.
  4. Roast the tomatoes and peppers in a cast iron pan or on the grill.
  5. For the tomato sauce; Melt the butter in a pan. Add tomato paste, granulated sugar and salt and mix.
  6. Fry the ingredients well until the smell of tomato paste comes out. Slowly add water to it.
  7. After the sauce has boiled for a moment, remove it from the stove.
  8. Chop the nail pitas into cubes and place them in the serving plate.
  9. Heat the broth in a saucepan. Then run the nails over the pitas.
  10. After whisking the yogurt, drizzle it over the pitas. Add the prepared tomato sauce to the yogurt.
  11. Place cooked meatballs, tomatoes and peppers on the top.
  12. Melt the butter in a pan and drizzle over the meatballs. Bon Appetit.
