  • 1½ kg potatoes
  • 2 onions
  • 350 g small cucumber
  • 25 g chives
  • 400 ml vegetable broth
  • 3 tbsp sunflower oil
  • 3 tbsp white balsamic vinegar
  • 3 tbsp mustard (medium spicy)
  • 2 tbsp butter
  • 2 eggs
  • Salt
  • black pepper
  • Mustard for serving

  • 25 g chives
  • 350 g cucumber
  • Knife chopping board

Peel the onion and finely chop. Cut the chives into small pieces, and dice the cucumber. Set aside.
