What do you need

  • 2 tablespoons Butter
  • 1/4 Cup Water (Boiling)
  • 2 tablespoons Orange Flavor (Finely Chopped)
  • 1/2 Cup Orange Juice (or Concentrated Orange Juice)
  • 1 Large Egg
  • 1 Cup Sugar
  • 2 Cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 Cup Blueberries (Fresh or Frozen)
  • For Topping:
  • 1 teaspoon Orange Zest (Grated)
  • 2 tablespoons of Orange Juice (or Concentrated Orange Juice)
  • 2 tablespoons Honey

How to do it

  1. Heat the oven to 350°F.
  2. Put the butter and boiling water in a small bowl, add 2 tablespoons of grated orange zest and 1/2 cup of orange juice.
  3. In a mixing bowl, use an electric hand mixer to beat the eggs and sugar until light. In another bowl, mix the flour, leaven , soda and salt; hammer in the egg mixture a touch at a time, alternating with the fruit juice mixture and ending with the flour mixture.
  1. Fold in blueberries. Spoon the batter into a 9×5×3 inch bread pan with grease and flour. Bake at 350°F for 50 to 55 minutes, or until a wooden pick or cake tester inserted in the center comes out clean. Cool the bread in a pan for 10 minutes, then move it to a wire rack to cool completely.
  2. For the top, combine 1 teaspoon of orange zest, 2 tablespoons of orange juice and 2 tablespoons of honey; stir until well combined. The spoon is on the hot bread; calm down.

  • 1 Egg (Beaten)
  • 1 2/3 Cup Milk
  • 1/4 Cup Vegetable Oil (Canola, Safflower, or another Neutral Oil)
  • 1-tsp. Vanilla Extract
  • 1 tsp Lemon Zest (Grated)
  • 1 1/2 Cups Fresh or Frozen Blueberries (uncut)
  • 1/2 Cup Chopped Pecans (or Walnuts)

How to do it

  1. Preheat the oven to 350°F.
  2. Grease and flour in a 9×5×3 inch loaf pan; set aside.
  3. In a medium bowl, combine flour, sugar, baking powder, salt and baking soda; stir thoroughly with a blender or spoon. Make a well within the center and set it aside.
  4. In another bowl, whisk the eggs with milk, vegetable oil and vanilla extract; add to the wells in the dry ingredients. Stir until the batter is moistened.
  1. Fold in lemon zest, blueberries and chopped pecans. Bread pan with spoon ready. Bake in a preheated oven for 60 to 75 minutes, or until a wooden toothpick comes out clean when inserted into the center of the bread.
